Zucchini Pizza Boats!

My garden is currently spitting out zucchini and squash on a weekly basis.  I was getting to the point that I didn’t know what to do with it, so I wanted to try something new.  Tofurky Pepperoni was recently introduced into my life and really… how could this be a bad idea?  Pepperoni pizza on zucchini?  Duh.  

Here’s what I love about zucchini:  the flavors are SO easily manipulated that it can be good with just about anything.  You can sneak it into a lot of meals without people even noticing.  It’s great roasted, grilled, fried… with balsamic, butter, tomatoes… It’s SUCH a versatile vegetable and can have so much flavor if you get it the opportunity.  I know there’s a lot of people who don’t like it, but this is a good way to introduce it to a zucchini beginner, especially kids.  Who doesn’t love pizza?

Now then… on with the good stuff!

Ingredients:

2 medium zucchini
1/4 cup of your favorite tomato pasta sauce
6 to 8 Tofurky Pepperoni (or whatever brand you prefer) cut into quarters
1/2 cup of vegan mozzarella cheese
2 tablespoons EVOO
2-3 basil leaves (garnish)

Zucchini Pizza Boats

Preheat oven to 350 degrees.  Cut your zucchini in half, length wise.  Hollow out some of the center of the zucchini; at least enough to get the seeds out.  Lightly coat the zucchini with EVOO, all over and place in a small baking pan or sheet.  Bake for about 10 minutes to soften the zucchini.

Once soft, take out the zucchini and add your pasta sauce to each boat, a tablespoon at a time.  Sprinkle your cheese into each boat followed by your pepperoni.  Bake for another 10-15 minutes until edges are browned.  Let cool, serve and enjoy!
