Wonderful Garlicky Hummus

One of the things I loved about becoming vegan was finding foods that I already adored and ate all the time but didn’t know were vegan.  For years, I’ve devoured every kind of hummus I could find and I don’t think I’ve run into one I haven’t become BFFs with.  Hummus is one of those recipes that is kind of difficult to mess up because it’s delicious in every form, especially if you love garlic.  This recipe is pretty simple, but it’s only a base.  There are tons of different ways you can shake things up, some of which I’ll have fun posting about later.  For now, let’s start with the basics…

Ingredients:

1 can chickpeas, rinsed and drained
1 lemon, juiced
1/3 cup tahini
2 garlic cloves
1/4 cup EVOO
1 teaspoon salt

Wonderful Garlicky Hummus

In a food processor, add garlic, lemon juice, salt and tahini.

Pulse until garlic is mostly chopped up then add your chickpeas.  While those are blending and getting nice and smooth, stream in your EVOO.  This will help loosen everything up and smooth out even more.  I like to let it process for a solid 2-3 minutes and get everything nice and creamy.  

Dash with some paprika and serve with your favorite multigrain snack, pita, chip… whichever you prefer!
