Vegan Fresh Vegetable Salad

Summertime is the time for cookouts, pool parties and all around fun in the sun.  And let’s face it, who doesn’t love a refreshing snack or side dish for any of those events?  Going vegan has made me reestablish my love for vegetables, especially all the seasonal summer favorites.  Tomatoes, cucumber, corn… oh my!  This dish is so refreshing and surprisingly light, making it perfect to bring to your next potluck or with those grilled veggie burgers!

Ingredients:

2 large tomatoes, chopped and seeded
1 cup frozen corn, thawed and drained
1 cucumber, chopped
1/2 medium red onion, finely chopped
1 green pepper, chopped
1/2 jalapeno, finely chopped
2 tablespoons white wine vinegar
1/2 cup vegan sour cream
1/4 cup vegan mayo
2 tablespoons parsley
salt and pepper to taste

Vegan Fresh Vegetable Salad

Chop all your veggies and add them to a large bowl.  Set aside.

In a small bowl, mix sour cream, mayo, parsley, and white wine vinegar.   

Vegan Fresh Vegetable Salad

Add sauce mixture and mix until well combined.  Add salt and pepper to taste.  Refrigerate two hours before serving.
