Loaded Mashed Cauliflower

Let me know what you think!  I’ve been obsessed with making this lately and I don’t even love cauliflower like that, for realz.  But really… this ish is GOOD!

Ingredients:
2 large heads of cauliflower, chopped into large chunks
4 tablespoons of butter
5-6 slices of turkey bacon, fried and chopped
2/3 cup of plain nonfat Greek yogurt
1/2 cup of shredded cheese
3 green onions, chopped
Salt & pepper to taste

Add chopped cauliflower to a large stock pot and fill with water.  Boil on medium/high heat until fork tender.  

Add butter and mash cauliflower with a potato masher (you can use a fork, but it may take a bit longer).  Once the cauliflower is to a size of your liking, add yogurt, bacon, cheese, and onions.  Mix well and enjoy!
