Blueberry Banana Walnut Granola

I’m always looking for cheap, easy things to bring to work that I can keep there for a while to snack on.  And I loooooooooooove granola.  I also loooooooooove blueberries.  Bananas, however… eh, I can live without them.  So I’m always trying to find a way to incorporate bananas into my diet cause I know they have a high nutritional value and they’re also good to use as a sweetener in dishes like this.  I managed to sneak in one on this recipe and you can barely taste it, but it still helps add to the sweetness we all love of granola.  

Now, I’ll admit… I was way too excited about making this, so we barely got any pictures in.  But honestly, the recipe is simple enough, you really don’t need them.  

Ingredients:

8 cups rolled oats
1 ripe banana
1 8oz package pitted dates
8oz dried blueberries
8oz walnut pieces
1 teaspoon cinnamon
1 tablespoon pure vanilla extract
1/2 teaspoon salt

Preheat oven to 275 degrees.

Rehydrate dates and one ounce of blueberries in a small pot of boiling water for about 8 to 10 minutes.  Drain water and add to food processor with banana, vanilla, salt and cinnamon.  Process for about 2 minutes, or until smooth.  

In a large bowl, combine half of the date/banana mixture with the oats.  Add the rest of the date/banana mixture until thoroughly combined.  You can add everything at once, but it’s much easier to do half batches.

Spread mixture out between TWO large baking pans or cookie sheets.  Bake for 45 minutes, stirring the granola every 15 minutes.  Let cool for about 20 minutes to crisp and add back to a large bowl.  Add the rest of the blueberries and walnuts and store in airtight containers.

This granola will actually stay good for about three months.  I put mine in 1 quart mason jars (it makes about three quarts) and keep one at work at all times for snacking for myself and others.  It’s not too sweet and goes great as cereal with soy or coconut milk.  My nephew gobbled up the bowl in the picture… he couldn’t get enough!
