Bacon Cheeseburger Cauliflower Casserole

I can’t say I know where TF the idea for this came from, all I know is I was looking in my deep freeze and saw the three main items and got weirdly creative.  Quite frankly, I don’t really care where it came from because I feel like I’ve hit a creativity wall here lately and I wasn’t sure what I was going to do next.  Though my favorite part was that I needed to literally buy one item from this recipe and that was the cheese, since it isn’t a regular staple in my house.  I’m pretty excited for this recipe.  I only made it Tuesday and it’s already half gone!

Ingredients:
1lb ground turkey
10 slices of turkey bacon
1 1/2lbs of riced cauliflower
1 onion, diced
2 cloves of garlic, minced
1 can of petite diced tomatoes, no salt added and drained
2 cups of shredded colby-jack or cheddar cheese
3/4 cup of non fat, plain Greek yogurt
2 tbsp mustard
2 tbsp ketchup
2 large eggs

Preheat oven to 400 degrees.

Brown ground turkey and bacon in a large skillet.  Drain grease and add back to pan over medium heat.  Add chopped onion and garlic and cook until onions are translucent, then add tomatoes.  Add salt and pepper to taste.  Let cook over medium high heat, stirring often, until most of the liquid is gone.  You can also strain mixture if this takes too long.  Take off the heat and let it sit for 10-15 minutes to cool.  

In a large bowl, combine 3/4 of the cheese, mustard, ketchup, yogurt and eggs.  Add cooled cauliflower and turkey mixture to the bowl until combined.  Then add to a medium to large greased baking dish and cover with foil.  Bake for 30 minutes then remove the foil, add the last 1/4 of cheese to the top and bake for another 20 minutes.  Let cool before serving.
